They only serve gluten-free crust M-W because they make a solid effort to prevent cross contamination. They make the dough in a separate kitchen and the wood fired oven gets to a temperature that degrades gluten but they still use the same work surfaces and utensils even though they’ve been washed and they serve regular crusts in the same prep area. I can only assume that’s what caused enough cross-contamination for our Nima sensor to indicate the presence of gluten in my daughter’s GF pizza. They took the cost off our bill but obviously it was pretty disappointing. If you’re only gluten-sensitive it might be fine as others obviously have high ratings but my daughter is a highly sensitive celiac so we didn’t risk it.
