Haven’t had ramen this good since going gf! Made specific modifications for my celiacs including designated water for the noodles and nearly everything could be made gf!
I contacted the owners asking what kind of noodles they use for GF and if there is cross contamination involved, they informed me that its a starch based noodle & to let the staff know they are trained to take the extra precautions. Although the last few times I've gone they have had new people and the cook said they use the same water to boil the noodles unless you specifically tell them it's celiac disease. Reguardless this is one of my favorite places to eat and I've never gotten sick from eating here.
Ramen is not gluten free. They offer gf noodles but cook in the same water as the gluten noodles. When I asked about the gf ramen they didn't let me know, I had to specifically ask if it's cooked in the same water so their knowledge might be lacking. The rice bowls are gluten free though and taste great. I'd just be cautious and make sure to ask lots of questions to make sure what you order is safe.
