The first thing I was asked when I walked in is if I wanted the gluten free menu. Before ordering, I asked my waiter if my food could be prepared with clean pots/utensils to prevent cross contamination. He assured me that they have a designated area for gluten areas and then asked if I had any other allergies. I ordered the GF cacio e pepe and it was delicious. I’ve only been GF for 1 week and am a new celiac, so I don’t know what it feels like to be glutened just yet , but I trusted the staff
