I asked about the vinegar they use on the sushi rice. It is a malt vinegar, so none of the sushi is safe. There was only one dish they thought they could adapt to be truly gluten free, but I opted to leave. They were friendly and the server was very nice about checking with the chef, so if you don't have celiac I think this place is quite nice. Sadly, not for me.
