I came to Pan Chancho for their Barbecue and Band series in 2017. I had the lamb burger on a gluten free bun and it was delicious. The ciabatta bun was a little bit hard, but I didn’t have any reaction to it (I react to gluten exposure within 12 hours). I bought a loaf of their GF pumpernickel loaf and brought it home. It tasted great and, again, I had no reaction to it. They warn customers with Celiac that they don’t have a dedicated bakery and there’s a cross contact/contamination risk.

I had a lovely breakfast and coffee at Pan Chancho. The curry omelette was delicious and the staff really tried to accommodate my allergy to gluten. There were a few choices on the menu and they do offer gf bread as an alternative.

They mean well, but it's a bakery. Their gf pumpernickel bread is good, but I reacted to the flour dust in the store. There was also an issue with their gf baguette. Same thing, it likely had flour from the air on it.
Stopped In today and saw their gf options. I asked if there was a dedicated area for gf, there is not. This establishment is not safe for celiacs

They now have a GF dedicated fryer. I had the Bánh Xèo which is vegan also. It was surprising and delicious - crispy, coconuty and complex.

Great breakfast. No dedicated fryer and everything is cooked on the same grill. They know what celiac is but not sure of how much they understand about it and how serious celiac. They also have some baked goods, breads and sandwiches. However, they can't guarantee that it's 100 percent gluten free. Everything may have been in contact with gluten.
