The owner has her own medical necessity to be gluten-free and thus actually understands the importance of cross-contamination. The manager enthusiastically walked us through each of their incredibly strict guidelines under the owbers' instruction for prevention, such as the separate prep area, no shared equipment, and no shared ingredients. She explained how the owner, in seeking a gluten-free option with real taste value, obtains the ingredients for the dough from Italy. [Side note, they are the first country to understand the significance of celiac and gluten intolerance and thus will proceed with testing all children as part of their routine child physical.] Their prices are also not gouged as she understand the burden of the cost typically faced by anyone requiring a gluten-free lifestyle.

PS you have to try the gluten-free deep fried oreos 😋 And they do half and half so you can try multiple of they delicious pizzas at one time!
