They are super knowledgeable about gluten. Almost everything can be made gluten free; the exceptions of pita bread, soup, and dessert stand out in my mind. The stews, kebabs, and rice dishes are all safe to eat. The lamb shank with dill rice is OUTSTANDING.
I'm not familiar with Middle Eastern food, but decided to give Pars Cuisine a try. I ordered the lamb shank and really enjoyed it. I discovered that I'm not a big fan of dill, and learned that I could have the rice without it. The place is NOT busy during the lunch hour during the week, I learned, but is in the evenings and on weekend. I plan on going back to sample some of the other option. practically everything is GF. When I indicated my needs to the hostess/waitress her reply was, "This is Persian food!" So I guess Persian foods don't incorporate as much wheat, etc., as do other kinds of cuisines. I certainly didn't know that!

The vast majority of the menu can be made without gluten. Besides the pita bread, which is typically served alongside the food and can easily be omitted, we were told nearly all of the entrees could be made gluten free. We have been here several times and have not had any problems. The servers have even offered to omit pita bread from our entire table just to be extra careful. Great food. We will definitely be back again.
