I have gotten some items from here a couple times now. It is great to have a place to get a yummy treat. Unfortunately one of the items I tried this time had xanthan gum in it for sure. I was bent over in pain within ten minutes of finishing half a scone.
I know much of gluten free baking includes xanthan gum as a good substitute that helps with texture and keeping the baked goods together but I wish it wasn't the go to staple. it would be great if bakeries utilized natural substitutes like psyllium husks or tapioca flour. I have had great results using a combination of these ingredients.
The goodies at Petunia's are so good though, sometimes the reaction might be worth it.
