Since there isn’t a way for me to respond to the restaurants comment, I’ll edit this one.
The time that I had visited was after lunch, before dinner. It wasn’t crowded, not in the least. I did inform my waiter that I was celiac and dairy intolerant, that I had read about your restaurant on this app, and was excited to visit. He was knowledgeable about the menu and the offerings. He made no offer of compensating for the pasta water or even pizza. Trust me. I’ve been eating out enough to make sure I can eat safely. I was in a different city and state. There was nothing else listed around on the app. I was basically informed that I could have a salad, take it or leave it. **end edit**
Do they have GF offerings? Yes. Is this a safe place for celiac and gluten intolerant to eat? Absolutely not. Maybe if you’re choosing gluten free for whatever…..reason. GF pasta is cooked in the same water as regular pasta. Pizza is cooked in the oven, no pans so cross contamination is a very high risk. I had the Dolce piccante salad. The raisins had a weird walnut aftertaste, but no walnuts. Waitstaff seemed annoyed with all the questions and irritated that I didn’t want the lentil soup.

If you mention that you are celiac, they will inform the kitchen and pizza staff. We do accommodate celiacs, as said in our presentation "depending on how busy the restaurant is, we might be able to cook the pasta in different boiling water and use a different strainer". At Piola, we will take all the extra precautions needed to accommodate patrons with Gluten-free intolerance.
Please, note that the environment is not 100% gluten-free.
To accommodate you safely, please warn your server of any GF intolerance or celiac disorder, so the kitchen staff will take extra precautions.
The pizza surface area will be cleaned, to prepare the GF pizza on a different surface with no flour and no semolina. A different shovel will be used. However, we do not have a second oven; we will brush the surface inside the oven prior to introducing the GF pizza.
In the kitchen, we will do the same and take extra precautions.
Your food will be prepared safely.
Our gluten-free crust is made of cauliflower flour, tapioca starch, olive oil, palm oil, eggs, water, sugar and salt.
We have two GF appetizers: Caprese and the Prosciutto & Co.
We have four GF salads: D'annunzio, Aristotele, Machu Picchu and Toscanini.
The first time I went they were very accommodating and said they cook the pizza in the same oven as regular pizza but on a separate pan. I didn’t have any reactions. The pizza was very very good!
But then I tried to go back and they told me they couldn’t accommodate the gluten allergy and so i went and ate at North Italia instead. North ítalia takes care of celiacs!
Not safe at all. Not sure why have gluten free options if they aren’t cooked safely. Pasta is cooked in the same water as the regular one and pizzas are all cooked together on the same surface. Very disappointing when they have soo many gluten free options.
Best gluten free pizza in my live!! Also they have vegan mozzarella!! I dont expect gluten free pasta with many option of type of pasta.
We thoroughly enjoyed our experience at Piola. We understood the possibility of cross-contamination as there is no dedicated oven; however my nonGF husband and I loved the GF crust on our Piola pizza (mozzarella, sun-dried tomatoes and basil). I usually know pretty quickly whether or not I have been glutened, and we are in the clear! The staff was very attentive and also provided some recommendations for exploring other neighborhoods in Miami. A great stop!
