I called and talked to the owner, he said that the chips are fried in the same fryer as the chimichangas (flour tortillas). He and I both wish they had a dedicated fryer, but that is not the case today.

Okay well first of all COME ON EVERYONE like its a damn Mexican restaurant and you're gonna go knowing damn well 85% of the food is flour tort or has gluten in it. Its a Mexican restaurant not American food they don't do gluten free so casually in there culture. But if you are LOOKING FOR Gluten-free do enchiladas they're made with corn tortillas.

Also I've asked before they use SOYBEAN OIL for the grill and fryers.

I ate there and did not get glutened but if I’m being honest I think I just got lucky. The wait staff had simply no clue what was going on, my waiter didn’t even know what gluten was. I got enchiladas with corn tortillas which they can substitute in anywhere they use flour tortillas, and the food was pretty good, but again I think I just got lucky and idk if I would eat there again.
Rancho Viejo can accommodate gluten-free with tacos and fajitas on corn-tortillas. The chips are NOT gluten-free unfortunately. I had 3 pulled pork soft tacos with rice and refried beans. The wait staff is not that knowledgeable on Celiac Disease so be sure to consult with a manager.
