We asked the waitress four different ways. Her answers: yes, they have a dedicated gluten-free fryer. Nothing with gluten is fried in it. Yes, the restaurant only uses non transferable oil. However, she says the oil in the dedicated fryer has not seen gluten itself. They have GF pasta, GF buns, GF pizza crust. The food is delicious. Never had a problem with the GF fried fish dinner (with french fries prepared GF) — a hard to find plate. As usual, best to ask the manager about individual requests and preparation. Worth a detour.
