Vinegar often contains trace amounts of gluten - they openly admit their vinegar likely has some. The vinegar is used in the sushi rice, so that's out of the question if you're celiac (though probably okay if you're just mildly sensitive). The staff is very knowledgeable about what you can in fact eat - sashimi with un-vinegared rice, which is a word I just invented. Can also get some hand rolls. And they go through the special precautions to avoid cross contamination. But having sashimi rice without the sticky properties, seeing other people eating sushi in front of you while you can't, is a bit lacking. So it's unfortunate in that it's a well regarded sushi restaurant, and you can't eat the sushi.
