I spoke with an off-duty manager (Caitlyn, unsure on spelling) who was very knowledgeable. Our bartender/server Sarah was also very helpful. Both really made an effort to help us have a good meal.

Some key points from our visit:

* Our server cautioned us that the chips were "gluten-friendly" but they could not guarantee gluten-free. There is a separate fryer, but the chef did not recommend eating chips from any of their fryers for someone with celiac -- could not guarantee no accidental cross-contamination there. Manager did not believe that anything with flour actually gets fried in any of the fryers.

* Our server brought us hot corn tortillas to eat with salsa and queso. I understood that corn tortillas do not share prep surface with flour tortillas.

* Menu is not marked for gluten-free, but most of the menu can be modified to accommodate a gluten allergy.

* The manager has created an allergy sheet that instructs the kitchen on how to do those modifications.

* There is a "gluten allergy button" that servers can and should use when ringing in your order to ensure that the kitchen gets the message.

* Some sauces e.g. for enchiladas have flour in them, so double-check with your server there.

* We had the queso, picadillo enchiladas (with a different sauce than normally comes on it) and chicken tacos al carbon. All on corn tortillas.
