My wife is Gluten sensitive and NOT celiac. As there are limited gluten free options on the island, this was a good find for at least pasta and pizza. Unfortunately, NO ONE seems to offer a GF bun for sandwiches or burgers which blows our mind as it's an easy tweak/adjustment. I grabbed her a GF Hawaiian pizza. I was not able to see how they cooked the pizza specifically though. The waiter noted that the restaurant typically has at least penne on hand but can attempt to source other types as long as they get the heads up of what you want specifically in advance. One can walk in and sit at the bar but the bar is limited to pizza and salad only. If you want pasta (GF or not), you need to make a reservation at least 1-2 days in advance. I booked a reservation for 2 days out and we'll see how that goes. Per the server, virtually any pizza or pasta on the menu can be made GF with the exception of things that have breaded items as they don't have GF breading options. There may be random exceptions. After my second visit getting another pizza, I asked a few more questions and thus have a few more answers... They have a common prep area but each gf meal means the area is thoroughly cleaned and prepped making it "safe" They have a seperating tray for the oven that keeps the gf items from touching the oven. They use Hand formed and tossed previously frozen dough.
