I was worried because I read reviews that say they use xanthan gum and corn and soy but I talked to the owner and she said they never use xanthan gum, only guar gum. It's still a gum but at least it's naturally occuring and not made in a lab! She said they don't use corn starch either unless someone asks for it instead of potato starch. I guess you can be allergic to potatos? That would be horrible! But anyways she said they spray Pam on top of the bread and that has corn and soy but she showed me the label and even let me watch her spray it and those ingredients are last and she only sprays for about .005 seconds and then she puts it in the oven really hot so there isn't much left afterwards. I got there right after they opened so I guess she had some extra time or something, they were making extra bread for one of the sandwich shops in town but I forget what it is called. I will have to ask so I can go try it. But yea it's not in the bread actually so you could even cut the crust off I guess if you're really sensitive. I usually have a horrible reaction to anything with soy, I can't even have little bits of soy lecthithin but in this week I have had a whole loaf o the bread from there and I haven't gotten sick so I don't think it's that much. I think that is a good sign because I am so sensitive to a lot of things and usually just don't go out eat at all because I don't want to have to deal with it but I'm glad I haven't had any reactions to the bread here. I tried the samples of the cookies but I didn't buy any, I blew my budget on the bread! But next time I will buy some snickerdoodles, they are great. I will write another review when I go back.
