Chef tour was an accidental find due to research on her gluten allergy, but OMG, I enjoyed it as much as she did!  Identify any allergy you have, and just ask for a chef tour guidance.  It wasn't busy, so they were very easy to accommodate even though specifically for gluten it is not their normal procedure since foods are marked GF.  HINT:   for those very sensitive... some were mismarked or signs switched.  He fixed as we went and if not marked GF but it was, he could explain why it was.  Also on the tour, he was constantly offering to fix a special preparation of most of the dishes  without gluten. Bonus!!!  No GF sign is going to tell you that!   Sorry, no GF Fried Chicken! Chef tour all the way!  Just ask, and show how much it means... ie, Don't forget to tip your Server... Extra!
