Zinnia works with an order sheet on which you fill out what you'd like to order each 'round' for up to five dishes. Non-GF items get crossed out so you know what you can and cannot order. You also get a bottle of GF soy sauce. I'm unsure of whether the wasabi/horseradish paste they use is GF.

For the available GF dishes, these are usually adjusted by leaving out the sauce or other condiments to make it GF friendly. As an example, the yakitori comes without any sauce. Most of the sushi is GF as is, though, so you mostly won't miss out on anything when ordering sushi dishes.

They've recently switched to tablets for ordering to streamline the process and to make it so staff doesn't have to constantly pick up your order sheet. This isn't the case for GF options yet and I'd say my only point of improvement. Other than that, the food is tasty and reasonably priced, the atmosphere is great and the staff knows their stuff and is incredibly friendly as well.
