I've eaten here often, almost weekly for 1.5 years now and I feel safe enough here.
Is it perfectly safe for celiacs? No, because they do have bread around and crumbs get into things sometimes.
However, I feel safe enough given that they do make an effort, and are aware of gluten, and have nutrition guides, and procedures.... and I feel some items are safer than others. For example omelets I think are pretty safe.

Very limited gf menu and the risk for c.c is very high. They have gf bread but it toasted in a toaster with all bread products.
Went in for brunch hostess said they have very little gf. I said an omelette? She said no so we left.
No
I’ve eaten here a lot for breakfast, and I substitute the toast for fruit, no problems. They pride themselves on the menu for preparing things “off the line” if you notify them of food allergies. Last time, however, I was served my GF omelette with huge pieces of bread laying on top of it. I repeated to the server that I had celiac disease also known as an ALLERGY and that I couldn’t eat what was given to me, I then watched them go back to the kitchen and re-plate the omelette. I had to explain that I would be very sick if I ate that because it had touched bread. They remade it and comped my meal. Pretty unnerving, but perhaps it was just the Altamonte location. I’ll have to be careful now.
Really delicious! Lots of options! Be specific about their potato prep.
To start off, I have been to First Watch many times with and without my family (who eat gluten-free), and every single time the staff has been accommodating and very friendly.
They have plenty of gluten-free breakfast options with foods that are inherently gluten-free (eggs, bacon, fruit, etc.). You can substitute any bread on the menu for gluten-free bread, including the french toast! They always ask if you have a gluten allergy to make sure the kitchen accommodates you.

I am bummed. Food was delicious but my stomach is paying bad. I told the server I was extremely allergic to gluten and she seemed understanding. I shouldn't have came here. ☹ it's things like this that make me never feel safe eating out. I know there is a warning with it being a chain but at other locations I haven't had a problem.

My daughter has Celiac and I’m gf. They prepare allergy meals in a separate area of the kitchen. She ordered gf French toast and it came out seperately and marked. Our server was very knowledgeable, but others there were not. It has now been a couple of hours since we went and my daughter and I both feel good with no signs of being glutened.

They are very considerate when I order gluten free bread for toast and inform them of my allergies. I'm sure other locations might be less kind but this one is great.
Cross contact is possible I'm sure, but I believe they car enough to make some effort

Decent brunch food. Whenever I mention gluten free they know what I'm talking about and seem to be careful. I feel a bit rushed though, they usually give us the check before we're halfway done with the food.
