I have eaten here about three times so far and never had an issue. The only thing I get is a hamburger on a lettuce wrap - I always emphasize my gluten allergy so they will be careful. I can't speak for the fries since I haven't had them but no issues with burger with lettuce, tomato, grilled onion, grilled green pepper, and ketchup. Only reason not 5 strars is that I don't know if they would be careful if you don't make sure they know its "severe" but they are always very accomodating when I educate.

I appreciate that they always ask if my lettuce wrapped order is an allergy. Fries are the only thing in the fryer, so no worries about cross contamination.

I’ve gone three times in two months and it’s been great every time. I tell them “allergy warning, I have celiac’s”. I order mine on lettuce (they do a really great job at wrapping the burger in lettuce), with everything on it.
I then inform them that my spouse would like a normal bacon burger on a bun. The staff has always reassured me and I hear them tell each other “allergy!” while cooking. They’ve always put my burger in a different bag marked “***ALLERGY***” and there was a red sticker on the tin foil of my burger.
If you’ve never been to a Five Guys, they have a very limited menu of just burgers (bacon, cheese, or plain) in three sizes, French fries (plain or Cajun), and milkshakes.
The only gluten items on the menu are the buns and malt. The chocolate shakes do not automatically come malted, so there’s never been a worry for me there.
