Ask for allergy treatment when placing your order. We have had dozens (at least) of visits here over the last five years with no issues.
It’s a Five guys so they do a couple things as well. No such thing as a variety of options here.
Hamburger in lettuce wrap or bowl or cheese dog in a bowl have been good options. Dedicated fryer. Best fries around.

Two of my party have gluten issues. We were able to get a lettuce wrapped burger. They were cautious to keep our order separate from the gluten food. They changed their gloves for our order.
Although all five guys restaurants serve gluten free, the staff behind the counter at this particular one made us feel like we were inconveniencing them when we said we have a gluten allergy.
Excellent food. Bun-less burgers and fries are safe (dedicated GF fryer). Reliable and delicious. Staff is careful to avoid cross-contamination.

I appreciate that they always ask if my lettuce wrapped order is an allergy. Fries are the only thing in the fryer, so no worries about cross contamination.

I’ve gone three times in two months and it’s been great every time. I tell them “allergy warning, I have celiac’s”. I order mine on lettuce (they do a really great job at wrapping the burger in lettuce), with everything on it.
I then inform them that my spouse would like a normal bacon burger on a bun. The staff has always reassured me and I hear them tell each other “allergy!” while cooking. They’ve always put my burger in a different bag marked “***ALLERGY***” and there was a red sticker on the tin foil of my burger.
If you’ve never been to a Five Guys, they have a very limited menu of just burgers (bacon, cheese, or plain) in three sizes, French fries (plain or Cajun), and milkshakes.
The only gluten items on the menu are the buns and malt. The chocolate shakes do not automatically come malted, so there’s never been a worry for me there.
