The man taking our order in the drive through knew about Celiac Disease and had himself recently been tested. He flagged my lettuce wrap burger for a “gluten allergy” without blinking an eye, and the burger and fries were safe and delicious.
There is an online allergy menu.

They have dedicated friers, which is amazing. They grill their patties on a different grill than their buns. The food is decent, but I like some other fast food restaurants better. The service is great though!

spoke with manager who assured me they follow precautions, including glove change, separate prep, different spatulas etc but still got glutened.
unfortunately it’s probably impossible to safely eat at in n out consistently despite their attempts at managing CC

Found In-and-out during our trip through California and Nevada. As their protein-style burgers and fries are a no-brainer for gf meals, we went there more than once.

I have never had an issue once telling them it’s a Gluten Allergy. The only gluten in the store is the buns! I was told buns are toasted separately from where the burgers are cooked and the only thing even in the fries is the fries themselves.
