I've been to both locations (as well as their related restaurant in Casper, WY), and while these don't have dedicated kitchens, they do have dedicated ovens, prep areas, and toppings. They have the best Neapolitan style GF pizza I've had outside Italy. I love stopping by here when we're in Denver!
Visited the Littleton location about a month ago; I'm late to getting a review in. They take GF seriously. Kitchen area has two sides, one of them for GF prep and the other for the rest. Separate pizza ovens. The menu is casual, with extensive GF offerings. Even a GF beer or two available, though the labeling on the bottle was somewhat suspect; assess your risk accordingly. I asked our server about the management's commitment to GF, and she said the restaurant, which has been around a while, has GF roots going all the way to the beginning.
I had one of the GF pizzas, and was very impressed. A sturdy, crunchy crust and excellent toppings. Took half of it home in a box, and it warmed up nicely a couple days later in the oven.

Fan freaking tastic! This is one of the best GF pizzas I’ve ever had. It’s crispy and delicious without falling apart. The toppings are fantastic too. It’s even great reheated. Only downside was the GF beer is gluten removed and not safe for celiac. They do have wine, seltzer and a full bar though
Safe place for separately prepared and yummy authentic Italian GF pizza!! Just make sure to enjoy every bite because you don’t want to plan on eating the leftovers the next day unfortunately -that’s the only disappointment honestly. And they’ll parbake for takeout so you grab it early on your way home and then warm it up and finish it off when you’re ready to eat. And the baked eggplant rolls are delicious!!
I am usually hesitant when looking for gf pizza but I can assure you that this place is very safe! I started to go to this place because finding gf pizza that was safe from cross contamination is very hard. But at this restaurant the staff are knowledgeable about gf and can make sure that everything is made gluten free for you if you request. The pizzas are marked with a little stick when they come out to you. I would say this place is definitely 5 stars!!!
So delicious! They import gluten-removed wheat flour from Italy to make their GF dough. I was a little skeptical at first, but Italy requires GF goods to be tested to verify less than 4 micrograms gluten per Liter; that standard is 5 times stricter than US standards for GF testing. I gave it a try and I’m so glad I did! Amazing, delicious gluten-free pizza 😋🍕 not suitable for someone with a wheat allergy, though!
We never go out for pizza but I felt very comfortable eating here after reading their gluten free process on their website. We ordered the gf focaccia bread (seemed like just a seasoned pizza crust but very good) a margarita pizza, and the vodka pie. All amazing and did not feel sick at all.
Had the GF pizza, house salad with dressing and GF focaccia for lunch. Everything tasted great (my non-GF sister couldn’t tell the difference) and I had no reaction after eating there. Staff was knowledgeable and when food came out it was identified as GF. They marked my ticket as Celiac and said they would use a separate area, wipe down the area, wash their hands and change gloves.i felt very safe eating there. Highly recommend!
Safe food!! Gluten free bread and pizza were amazing. Best pizza I’ve had in Colorado. ****Beware: there is a 4% surcharge on all tickets because the owners don’t want to pay BOH a decent wage.
Marco’s was truly amazing! The staff was so kind and knowledgeable about the gluten free. I told my server that I had a gluten allergy and immediately she said that all the meals would be marked with a little wood stick! The focaccia was so squishy and yummy! I didn’t get sick and would go back in a heartbeat!
Sensitive celiac and I did great! No problems except I ate a lot. One pizza was enough to fill both of us and it was great. They changed gloves and went to a separate area. Even cooked in a separate oven. It wasn’t busy when I was there so it was lovely. We hit happy hour. The focaccia is just pizza crust so skip that and get the wings for an appetizer. The pizza was fricken fantastic!

We absolutely love Marco’s, and have been coming here for years! We have celiac and feel very at ease here. All the research I’ve done on wheat starch vs wheat flour completely reassures me. So for us, Marco’s is always a favorite!!
This is our new go to for gluten free pizza. My husband and I are both biopsy diagnosed celiacs. We were concerned about a prior review so we asked for the manager to ask some questions. He explained that there is a separate prep area for making the gluten free pizza dough, and for prepping the gluten free pizzas and a separate pizza oven just for GF pizzas. He also brought out the gluten free flour blend they use for the dough for me to review the ingredients. It is made in Italy and it clearly states Gluten Free, and contains wheat STARCH, not wheat flour. I’ve done my homework on wheat starch, and on GF items made in Italy. Wheat starch, if properly derived, contains no gluten. Italian GF products are held to higher standards than GF products here in the US. We decided to go for it. If we were going to react we would have sometime the next day. We did not react. I highly recommend Marco’s Coal Fired Pizza for GF Pizza. Just be sure to order it GF!
NOT a true gluten free crust. They use WHEAT flour. So all y’all saying you felt fine might wanna reassess if you’re actually celiac. Don’t tell people here you’re celiac if u haven’t been diagnosed!!! True celiacs should NOT have wheat starch, even ones that claim to be gluten free
