I told each employee that I needed gluten free and they point to the ingredients list. I had one employee use the same thongs to get pita chips for a customer and then toss my salad. The employees do not understand celiac at all.

Staff does not always change gloves after handling the bread and crouton items. I said something and the server offered to change gloves, but I declined to let my son eat there because I had concerns over how many other times gloves contaminated with gluten had been used previously in all of the salad items.

Most ingredients are GF to begin with except the obvious ones, and there is an allergen info document on their corporate website. The only pitfall is that the last staff member in the assembly line puts huge croutons on the salads of those who ask for them, so if you're not on the ball he'll start handling your salad with gloves contaminated by prior customers' croutons. Be advised.
