Tell them that you have an allergy and they will change gloves. Only one person will make your salad instead of passing it down the line. Tongues, ladles, and other utensils are kept segregated to avoid cross contamination and everything is labeled well for gluten such as the dressings.

Dropped in right at lunch and informed them I was celiac. They used new gloves and picked goods from the original container versus the open bar. They were very respectful of my needs!

Staff was very careful with putting together my salad bowl. Changed gloves and kept the bowl all the way down the line vs passing it to the other staff.

Made to order delicious salads - you pick the ingredients.
Most ingredients are GF to begin with except the obvious ones, and there is an allergen info document on their corporate website. The only pitfall is that the last staff member in the assembly line puts huge croutons on the salads of those who ask for them, so if you're not on the ball he'll start handling your salad with gloves contaminated by prior customers' croutons. Be advised.

Ingredients are labeled if gluten free. The bread and croutons are in a separate area at the end of the line. All salads are mixed in their own bowls
