Most Shake Shack locations offer gluten-free buns for burgers. A lettuce wrap is also an option.
I believe it was Kevin number 489703 who waited on me and was wonderful. He assured me he would make my meal —lettuce wrapped burger with fries and a strawberry shake totally gluten-free. He was reassuring and very sensitive to my concerns of being a sensitive celiac. Cross contamination issues are serious and would get very sick if I was glutened. Just want to say, if you are celiac, have a gluten allergy, you can go to Shake shack at sky Harbor, and be assured of having a gluten-free meal It is rare to find a place at an airport that provides and accommodates serious allergy prone travelers. When I asked if they had a gluten free menu, they told me no, but they could give me a burger in a lettuce wrap. She asked if it was for a gluten allergy (which I know celiac isn't really an allergy, but I just said yes)when I said yes she called to the back that a gluten allergy order was coming back. When I asked if the shakes were gf, she asked someone. They went to the back, came back and said yes.
GF bun available, bit dry but not too bad. The burger itself was pretty good. Was told the GF bun is toasted separately from the regular buns. I spoke to someone at the counter and they gave the kitchen a heads up there was an allergy order coming up. You can order on the kiosk and add allergy instructions. There is a protocol they are supposed to follow for allergy orders. Sadly no dedicated fryer.
