We get the gluten free burger/bun a few times per year and despite being very sensitive we have never had an issue. Be sure to note “allergy” on the order. Since this is a fast food chain we always talk to the manager when ordering. The frier is not dedicated and the fries are not safe.

Alas, we ordered two plain vanilla custards and reiterated clean gloves three times--- I could literally see several crumbs on my custard and greasy thumbprints all over the outside of the container. Nima positive, of course. Celiacs should stay away.

Fries are not safe for celiac but this place has a good burger and a GF bun. I have celiac and have eaten here a bunch of times. They are careful, separate my food, and I’ve never gotten sick from it.
Notes
Most Shake Shack locations offer gluten-free buns for burgers. A lettuce wrap is also an option.

They use a separate space to prepare the gluten free burgers. You get gluten free buns. When you put your order in the kiosk you can label what allergies you have. A manager came out to tell me that they can’t guarantee the fries are gf because they cycle the oil sometimes.

Located in Terminal C, take a right (towards gates C23-36). Was able to order a cheeseburger with a GF bun (pretty thin but did not fall apart!). They entered it as a gluten allergy and I asked them to change their gloves. The bun is toasted separately on the grill instead of in the toaster oven. I did not feel overly safe, but thankfully did not get sick. Nothing too special but nice to have an option in the airport.

I have celiac disease and I have not had a reaction from this restaurant so far (although I usually just get a burger patty with nothing on it I am a purest, but anyway the buns are cooked to perfection!!!๐๐๐
