4/7 of us have celiac disease so we are very careful where we eat. I called a head to see what they had and the lady said all but Mac and cheese and balogna were gluten free so we went and they have bread and chips that are also not gluten free . But they were very knowledgeable about cross contamination and made sure to make the gluten free items first then our other ones and to change gloves if needed to touch bread . We had chili cheese Fritos pie , pulled pork , and chili cheese fries . Everyone loved it and no one got sick!!!!

As a Celiac, I miss eating meat-heavy meals at restaurants, due to the fact so many restaurants put gluten-containing marinades, seasonings and sauces on their foods.
This past weekend, I was in Oklahoma and stopped by Billy Sims BBQ with my family. This is an order-at-the-counter place with self-serve drinks. I told the guy who took my order that I am celiac and he instinctively grabbed a piece of bread to put in the toaster, caught himself and asked me if I wanted him to change gloves. He and the manager told me that their potato salad, their meats and their sauces are gluten-free!
Aside from their $5.99 sandwich and drink deal which is an amazing value but not gluten-free (my husband ordered it for himself) we got a few items to share with family.
For $21.99 we got a 3 meat plate which came with 2 sides, pickles, peppers, onions and a slice of bread (obviously I didn't get bread.) I chose the polish sausage, sliced brisket and pulled pork along with double potato salad.
My other family members ordered the $12.99 smothered baked potato (jacket potato) that comes with butter, sour cream, cheese, chives, meat, sauce. They wanted to split it so the potato pictured is only half of the potato! It's huge!
This is a casual restaurant chain owned by a former local footballer, and there are locations in Oklahoma, Kansas, Missouri, Iowa, Wisconsin and Michigan in the USA.
While the brisket was a tad dry for my tastes, I enjoyed all the sauces, the other meats and sides. The service was great and the price was a fantastic value.

Good food and a lot of choices. It’s fast food. Portions were generous and prices fit what you got ($17 for a good helping of meat and two sides). The manager seemed very knowledgeable including watching for cross contamination. I was told that the bologna contains gluten and the polish sausage was questionable. Kudos to them for being that aware. Sides were obvious. The only gluten was Mac and cheese. The young man who made my order made a mistake and put toast on my meat but when I called it out he remade my plate and was very apologetic. I would eat here again but would be a little concerned about mistakes if doing door dash.

Service and understanding of GF has gone WAAAAY downhill at the Hays, KS location. Meal came our 3 separate times wirh toast. GF/allergy/no bread/change gloves stated and restated multiple times. I know the staff was exasperated as it was clearly displayed with each interaction. Always try to go during non busy times so as to put the staff out as little as possible, but that doesn't seem to matter anymore. Sad because this used to be one of our few go-to places when in Hays. :(
