While Chuy’s doesn’t have a GF menu, they can make accommodations by replacing tortillas with GF tortillas in many menu items. They are very helpful!
The manager, Shawn, is the first manager that has come out to speak with me directly since being diagnosed. He basically said there isn't anything that one with celiac can eat here (even the rice has gluten in it). BUT they do have a gluten free menu which is just basically items that can be modified. He asked what I needed to have in order to be safe, and I asked for them to change their gloves and clean the work area. He was even going to ensure the food was going to be cooked on top of foil. My go to Mexican food were cheese enchiladas before my diagnosis and this is the first time I'm going to be able to enjoy my favorites. Truly appreciate this place! He said that they could even do chicken fajitas (as long as it's chicken that isn't marinated) and they could do it on the flat top (which would take longer).

Very few gluten-free options. They marinate the fajita meat in beer. The roasted chicken is gluten-free, but I found it very dry. Not my first choice for gluten-free tex-mex!

So I told them I was gf and they went to get me a limited gf menu. Better than what other reviews had BUT not super confident in these meal. Def will use my activated charcoal to help with symptoms
