We were here a couple days ago. they were very honest and explained cross contamination is highly possible. All corn chips or corn tortillas are contaminated. I also have a soy allergy so their sauces are out. I got beans and pork and was 😫 sick. My server was good this was my bad

This establishment is not a dedicated gluten-free environment. But they do offer gluten-free options. Even though I am celiac, I still eat at restaurants like this. The manager Brian was very helpful when I ordered and explained to him my gluten intolerance. He made sure that my food was made correctly and brought to me by him with no issues! I had the bean, cheese, and shredded chicken nachos with a side of guacamole. It was very delicious and I didn’t have any issues afterwards.

Chuy’s is a go to for me in Texas and this was my first time trying it here. I know from previous experience. The chicken fajita meat NOT marinated is gluten-free. Usually I get the chicken enchiladas with deluxe tomatillo sauce but opted for the Mexi Cobb salad and some corn tortillas instead. I also brought my own chips and just asked for a basket and paper and a separate side of creamy jalapeño. Other times when I have forgotten the creamy jalapeño I have just asked for an order of corn tortillas to dip instead. if you’ve never been before you must get the creamy jalapeño it’s amazing. The manager personally walked back and cooked my chicken breast to ensure there was no cross contamination.

The manager and servers were really great about answering questions and reviewing ingredients in detail with me.
I’ve had my go-to “safe” dishes for a while, but when I wanted to try something new the manager pulled up a seat and broke down the whole menu for me.
A lot of their sauces & queso have a roux base, but these were what we reviewed as safe at this location:

The tortilla soup and salad are what I’ve gotten historically with no issue. I did find out many of their proteins are marinated in shiner and that they can’t guarantee gluten free due to the potential for cross contamination on the cook surfaces.
But, I happily ordered ground beef enchiladas with ranchero sauce with no issue!
* I was told at another location that they wheat dust their chips. They don’t do this at the Norman location. Guac/Salsa were great to enjoy without my own GF bag of chips 😂
