My daughter has celiac and we went here for pizza as we heard good things. We ordered a few different types of pizza. This was the best GF pizza I’ve ever had by far and I would have never guessed it was GF. My daughter had zero reaction and I would highly recommend this restaurant
They use deglutenized wheat which is not safe for those who have a real wheat allergy. It's only safe for those who are allergic to the gluten starch which is removed but you can not remove the wheat protein from deglutenized wheat. This is why their pizza makes some of us VERY SICK.
I think some of the hype about this place is just staged social media. I was excited to eat here. We had a large group. It was more dingy than old fashioned, service was positive but amateurish. No one thought their pizza was worthy of the hype.
I am not angry and we had fine interactions- I just wanted to add that my observations and opinions are very different from the glowing recommendations I got from online and offline.
I feel like I let my guard down for this place- and I definitely got reminded to not trust non-celiac reviews and reviewers.
Based on the word of mouth I was expecting Pizzeria Locale or Pizzeria Uno quality and I experienced the opposite end of the spectrum. One of those places people pretend is great because pride and optimism coerce them to - and there’s no harm for healthy eaters to join that crowd in life.
But for me it was another awkward meal I bought friends and family (and tipped well as a service and F&B vet) after pretending that a restaurant everyone was visiting to accommodate me was great, when in truth it was fully disappointing.
My GF pizza was mediocre and doughy crust at best and poorly undercooked. After only watching their kitchen on the way out (when it was too late) I realized the chances of direct and cross contamination are extremely elevated. As were some basic food handling risks.
I did get sick from my pizza (it’s the only thing I consumed for 6 hours before and after). I can’t say yet if I got G-Bombed, or just punished by the low quality of undercooked papery dough, or maybe the obviously second rate prep on display. (Our dish-ware was grimy, our table had dried food left from prior diners etc.) Overall they had very typical and common mediocre /amateur restaurant QC.
I really wanted to fall in love here but was so disappointed by the gap between hype and reality that I decided to add one of my only reviews on FMGF.
Hopefully I was just there on a bad night and maybe your experience will be better. I wish them and their fans nothing but enjoyment.
But I must sadly suggest strongly that you go in to this restaurant with that special energy and full focus that all celiacs know we need in an unproven possibly unreliable kitchen.
We called the restaurant today after reading some of the reviews - they confirmed that the gf pizzas are cooked in a shared oven, and that they’re unable to cook the gf pizzas on a separate pan because the pizzas wouldn’t cook correctly, so there’s a high potential for cross contamination.
We went here once and the gf pizza was amazing, but celiacs should be aware that the pizza isn’t celiac safe due to the shared oven.
They had gluten free pizza option on the menu and server assured us they were careful. However got stomach ache after being here. Suspect the server rushing around serving the pizzas to the customers had used the same pizza cutter on all the pizzas. Could have been due to other issues but did not go back there again. Extremely noisy, very busy. Could not talk to anyone due to it being so loud. Pizzas tasted good though.
It seems there is some inconsistency in the information being given out. I called to verify safety based on some of these reviews and the person on the phone said they use the same oven as gluten containing pizzas, but they “put them in by themselves and the oven is 1000 degrees.” It is true that high temperatures can denature gluten, but there is not much info about how long that would take in a pizza oven and I can almost guarantee they don’t wait more than a minute between pizzas. The person even said “we are very gluten friendly but can’t claim to be gluten free.” I would not risk as a Celiac.
Really enjoyed pizza here, felt safe and staff made me feel very comfortable when requesting my dietary needs. The only thing that made me a little nervous was I forgot to clarify if the cutting of the pizza was done with specific utensils to avoid cross contact concerns. But I remained well and had no issues following dinner.
The pizza was incredible! Sooo delicious, did not feel like a gluten free substitute. They use imported wheat from Italy that has had the gluten removed. If you have a wheat allergy, this place is not for you. They are super careful with cross contamination, very knowledgeable about celiac disease, and I did not get sick.
I have had good experiences eating here. The thing that is unusual about their gluten free flour is that it is actually made with wheat. It is imported from Italy, where they have devised some process to remove the gluten. Maybe that is why it feels like some kind of transgression to eat it…. Yet I have had only positive experiences and I love the wood fired oven aspect. The waitress seemed a little condescending, but I think that was just her personality.
PS. They have a great gelato shop next door that I also eat at. I’m not sure it’s totally gluten free. But eating ice cream with coffee probably is going to be an issue no matter what…
The pizza is the best ever. No process to keep the gf pizzas separated in the oven. I really wish they would come up with a safe process. Scary. The gluten burns off in the oven? Thankfully we didn't get sick but too nervous to go back.
Amazing gluten-free pizza. Very knowledgeable about celiac disease and cross-contamination. Pizza was prepared in a special gluten-free room, and while cooked in same oven as gluten-containing pizzas, they put my GF pizza in by itself to avoid contamination while cooking. Having traveled through Italy (both before and after celiac diagnosis), I can say this pizza rivals what I've had in Italy. Amazing.
I made the mistake of eating at the bar one night and saw the cook preparing regular pizza, getting flour all over his apron, and then going over to the gf prep area to make a pizza there. They claimed that the oven burned off the gluten, so that's why they could go in the same oven. Dude, that's not a thing.
Can’t vouch for Celiacs, I have NCGS ( non celiac gluten sensitivity), but the handmade GF crust from imported Italian GF flour is the best I ever had. Puffy, yeasty, chewy, you can’t tell the difference from regular crust. I had to ask 3x, “are you sure this is GF” that’s how good it was. They have restaurants in Las Vegas and S Cal
I risked it and had a pizza. Easily the best gluten free pizza I have ever had... And I have tried a lot.
I was nervous so I asked questions. They said that the health department approved them to cook on the same set face because of the 1000 degree oven. They even offered up quotes from a regular celiac customer.
All I know was I was contaminated... it was a sad day. I was so hopeful.
They use caputos flour blend (you can order it online). For anyone who wants to know.
Best gluten free pizza I've ever had. Can't wait until next winter to go back to SLC for more. Fluffy crust on top but thinner on the bottom. Toppings also high quality. We have Celiac and, while they admit they can't control for airborne exposure (since not dedicated gluten free), they do prep pizza in different area and take all precautions they can.
Have had GF pizza all over the country and in Italy, and this tops the list!
Best gluten free pizza I’ve ever had. Truly fantastic. Can’t say enough good things.
The staff was completely honest about the risk of cross contamination; common kitchen space, no special pan in oven. However, the waitress made up some stuff about how the “heat in the oven kills the gluten so you should be ok.” I should have known better.
Shame on me for even risking it. It was delicious pizza. If you are just intolerant, you will probably be ok.

Absolutely amazing gluten free pizza. Made from the very best gluten free flour (Caputo brand). We order the "00" flour for pizza when we make it homemade. Always wanted to try the gluten free flour from Caputo brand but couldn't find it. I was so pleased! It was delicious! Next door they have illy espresso and gelato!!! It's very close to real Italian pizza. But the best pizza compared to the New England pizza made by real Italian Americans.
It was my favorite gluten free pizza in Nevada, but I have to update this review. I’ve had the pizza many times over the years, but I got glutened badly on my most recent visit. It reminds me that at the end of the day, I’m gambling my health as someone with Celiac disease when I dine in a kitchen full of flour.
This place is super cool and the ambiance is great! They have gf beer. Unfortunately I did get a reaction. The pizza was the best I’ve had but I would be careful if you are Celiac. I mean it makes sense they bake in the same oven. Fresh flour everywhere. The staff is great and I would go back with my non celiac folks because this place makes delicious pizzas.
